THE MEXICAN WILD AGAVE "SALMIANA" FORMES THE BASIS OF OUR DISTILLATE. A DIRECT EXTRACT OF THE RARE PLANT IS FERMENTED BY ADDING A SPECIAL WINE YEAST TO THE AGAVE WINE AND THEN DISTILLED TWICE.
BETWEEN THE FIRST AND SECOND DISTILLATION STEP, WE ADD THE Distinctive AROMA OF BLACK FOREST SPRUCE THROUGH A MACERATION PROCESS.
SMOKE IS THE MOST KNOWN CHARACTERISTIC OF A MEZCAL AND MUST NOT BE MISSED IN OURS. UNLIKE IN MEXICO, HERE IT COMES FROM LOCAL WOOD. WE ALSO CHOOSE TO USE VERY LITTLE SMOKE SO THAT EVERYONE CAN HAVE FUN.
